Green Garlic Redux
Clearly, green garlic is the "it" vegetable of the season (which begs the question--is garlic actually a vegetable? It doesn't really feel like it to me, but if it's not a vegetable, then what is it?). In today's New York Times Magazine, the Food: The Way We Eat column featured green garlic. The recipes were for a green garlic vinaigrette, a dip for artichokes and a pasta dish (linguine with green garlic clam sauce), which all sound tasty. My spinach and green garlic soup from last week is long gone, and I didn't see any green garlic at the farmers' market yesterday--maybe that will be my prompt to get some garlic cloves in the ground now and see what happens.
